Zucchini Salad Recipe
Ingredients:
- Cream (1 cup)
- Dijon mustard (1/2 tbsp)
- Extra Virgin Olive Oil (2 tbsp)
- Pepper
- Salt
- Spring onions (chopped, 2 tbsp)
- Zucchini (2 lbs) – peeled and cut into smaller pieces.
Preparation:
Mix some salt in water and soak zucchini pieces for 10 minutes.
Remove pieces and drain all water.
Heat olive oil in a pan at medium heat.
Add in the zucchini and stir till cooked.
Remove zucchini and allow to cool.
Mix the rest of the ingredients in a mixing bowl. After mixing well, add in the zucchini and mix till all zucchini pieces are well-coated.
Ready to serve.
